Meat eaters and vegans alike will enjoy this Cauliflower Lentil Taco recipe! You can put the mixture in gluten free, corn, or alternative tortillas, or (our favorite) atop a salad!
You’ll need:
– 1/2 medium white onion
– 1 bag frozen cauliflower rice
– 2 c cooked green lentils
– 1 c salsa
– 1 tbsp. tomato paste
– 1 tsp garlic powder
– 1 tsp salt
– 1 tsp smoked paprika
– 1 tsp ground cumin
– 1.5 tbsp coconut aminos
Preheat a cast iron or stainless steel skillet over medium heat. Spray the pan with non-stick (olive oil or avocado oil) and add the onions. Cook 2-3 minutes. Once the onions have cooked 2-3 minutes, add the frozen caulilflower rice and stir well. Cook 3-4 minutes.
Add the rest of the ingredients and stir well. Cook for 8-10 minutes allowing all the ingredients to come together.
